We are seeking an exceptionally skilled Executive Sushi Chef to develop and execute the culinary direction of SPICE, One Hospitality’s newest Concepts. This is a rare opportunity for a talented and entrepreneurial sushi chef to curate and deliver a world-class sushi menu centered on guest experience, value, next level moments.

About Us:

One Hospitality is the parent company of Standard Hall, Annex, Live, Short North Pint House, Forno and our newest location Astra at the Rooftop of the A/C Hotel.

Qualifications

  • Minimum of 2-3 years of professional sushi chef experience

  • Deep knowledge of traditional and modern sushi techniques

  • Proven ability to work with and prepare premium raw fish and seafood

  • Strong leadership, communication, and organizational skills

  • Commitment to cleanliness, sanitation, and kitchen safety protocols

  • Culinary degree or equivalent formal training

  • Proficient in English communication verbal and written

  • Ability to work under pressure and high volume environment

Responsibilities

  • Develop and design a premium sushi program

  • Incorporate seasonal, fresh ingredients and find a balance between traditional and innovative concepts

  • Ensure and maintain product integrity from receipt to service

  • Prioritize product quality over cost savings

  • Cut, slice, and fillet a wide variety of fish with expert precision

  • Prepare top-quality sushi dishes including sashimi, nigiri, and maki

  • Maintain consistency in taste, quality, and presentation

  • Oversee sushi and kitchen teams at the highest standards

  • Sterilize all utensils, tools, and equipment before each use

  • Monitor inventory, freshness, and proper storage of ingredients

  • Collaborate with Executive Chef/Culinary Director to ensure an exceptional customer experience and menu development
