Position Summary:
The Wholesale Meat Cutter is responsible for breaking down, trimming, and preparing primal and sub-primal cuts of meat for wholesale customers including restaurants, grocery stores, and food distributors. This role requires precision cutting skills, strong knowledge of meat specifications (such as NAMP/IMPS), and adherence to strict food safety and quality standards.
Key Responsibilities:
- Cut, trim, bone, and portion primal and sub-primal meat cuts according to customer orders and specifications.
- Operate meat processing equipment safely, including band saws, grinders, slicers, and knives.
- Inspect meat products to ensure quality, consistency, and freshness standards are met.
- Properly label, package, and prepare orders for delivery or pick-up.
- Maintain accurate production and inventory records.
- Follow all USDA, HACCP, and company food safety and sanitation guidelines.
- Work collaboratively with the sales and customer service teams to ensure accuracy and customer satisfaction.
- Maintain a clean and organized work area, including regular cleaning and sanitizing of tools and equipment.
- Assist with receiving, rotating, and storing meat products to prevent spoilage.
Qualifications:
Preferred:
- Previous meat cutting or butchery experience.
- Strong knowledge of meat cuts, yields, and trimming methods.
- Ability to read and interpret customer orders and cut sheets.
- Familiarity with safe handling and sanitation procedures.
Required:
- Able to lift up to 80 lbs. and stand for extended periods in cold environments.
- Strong attention to detail and quality.
- Team-oriented with good communication skills.
Work Environment:
- Cold production and cutting rooms (temperature-controlled).
- Use of sharp tools and industrial meat processing equipment.
