Job DescriptionPosition Summary


The Night Shift Dough Maker is responsible for producing high-quality dough to support daily store operations. This role ensures all dough is prepared, portioned, and stored according to company standards so that opening teams begin service fully stocked and ready. This position is essential to maintaining product consistency, food safety, and overall operational excellence.

Key Responsibilities


  • Prepare all dough batches according to company recipes, weights, and timing standards.

  • Operate mixers, proofing equipment, scales, and other bakery/pizzeria production tools.

  • Portion and ball dough accurately to spec.

  • Label, date, and store dough following food safety and FIFO procedures.

  • Maintain a clean and organized production area, including equipment and storage spaces.

  • Follow all sanitation, safety, and allergen-handling protocols.

  • Monitor flour, yeast, oil, and ingredient inventories; communicate low stock to management.

  • Complete production logs and shift documentation.

  • Assist with unloading ingredient deliveries (if applicable).

  • Work independently and efficiently during overnight hours.

Qualifications


  • Previous dough-making, bakery, or food production experience preferred but not required.

  • Ability to read and follow recipes with precise measurements.

  • Strong attention to detail and a commitment to product consistency.

  • Comfortable working overnight with minimal supervision.

  • Ability to lift 50 lbs frequently and stand for extended periods.

  • Must maintain excellent hygiene and follow all food safety standards.
